    PIG ROAST CATERING - DONE RIGHT!

    The roasted & smoked whole hog cookout is our trademark culinary experience. We slow cook whole pigs over all-natural California hardwood. It is low temp, slow going and leaves the meat with a unique and delicious flavor. We are the pig roast masters and this is the ultimate pig roast catering experience.

     

    Our pork is hand selected for quality and flavor. It is sourced from local farmers, partners that we know and trust. It is all free-range and all organic, never having been treated with any anti-biotics, medications or hormones.

     

    This is not your typical ‘pulled pork’ found on most BBQ menus. This is perfectly cooked and seasoned heritage pork, separated from the bone, blended and served pulled, sliced & chopped. You get a mixture of all the succulent pork goodness in each and every bite.

    TRADITIONAL NANTUCKET

    We start with a 48-hour injected herb brine of Temecula apple cider, black pepper, rosemary, garlic, salt and thyme. For this style we roast over hardwood charcoal. Traditional pig pickin' at its best.

    MOJO CUBANO

    Fresh citrus, hot peppers, a touch of honey and all of the garlic. This is how we do it in Miami where cooking pork is a way of life. Black beans & rice, sweet or fried plantains. Flavor from South Beach to Little Havana.

    CREOLE CAJUN

    Our Creole Cajun rub develops deep delicious flavor as it cooks with pork. A little spicy and a lot of flavor -Louisiana style. We can even 'kick it up a notch' to bring the Cajun fire, if you dare!

    HAWAIIAN LUAU

    We go full aloha on it. Pink Hawaiian sea salt, garlic, a touch of soy sauce and with fire pepper water, grilled pineapple and mac salad. This is the best Kahlua style pork you will find without a plane ticket to Oahu.

    JAMAICAN JERK

    This is some legit jerk. Our heritage pork is dry-rubbed, then wet marinated with a unique and delicious spice mixture. of Allspice, brown sugar, fiery Scotch Bonnets and Pimento charcoal smoke.

    CONTINENTAL DIVIDE

    We start with a spicy Texas-style dry rub and cook over Hickory & Mesquite charcoal. The finished pork is served with sweet Memphis-style and Carolina gold BBQ sauces, potatoes and cornbread.

    HOW WE HANDLE SERVING SIDES

    More than 24 hours before the roasting begins, we start the cooking process with a brine, glaze, or dry rub.  This flavor decision will go a long way to defining the overall style of our finished pork product.

     

    Every Reel & Ranch cookout includes 2 gourmet side dishes paired perfectly to compliment your roasted pig. In addition, we offer a wide variety of premium sides that can be added on to any meal.

    Pan-roasted with our signature smoked bacon, grilled yellow onion and sambal chili.

    TOMATOES WITH PEACHES

    Few fruits pair perfectly like heirloom tomato and fresh golden Southern California peaches.

    TWICE BAKED POTATOES

    Roasted and mashed served in potato skin boats. Roasted garlic, sour cream & chive -or- loaded mash.

    SWEET POTATO QUINOA & KALE

    Diced & grilled with crushed red pepper flake, aged red wine vinegar and tons of butter.

    DA BOMB MAC & CHEESE

    Mac & cheese is not easy to get right from scratch. Don't worry we nailed ours. Try it. We NAILED it!

    RAINBOW CARROTS

    Wood-fire grilled heirlooms carrots with curry, Greek yogurt, fresh lemon, parsley and pistachios.

    What have been pig roast catering for a long time. After many cookouts, we have learned that each one is a little different. We all have different tastes, different visions and different needs. For most cookouts, we present meals in a serve yourself ‘better-than-buffet’ style.  Action stations are attended by our chefs who can help serve, suggest & answer questions while guests select what they want from the offerings displayed.

     

    Are we missing something? Want to make a modification? If you have something else in mind – that’s great! We love to be creative and love to collaborate. Let’s hear your ideas. It’s very likely that we can make it happen!

    How much does a pig roast cookout really cost?

    Cookouts vary in price depending on season, how many people will be feed, what types of items or additional courses are selected, and a few other site and service-related factors. In order to ensure we are giving you the best & most accurate pricing possible we should talk specifics, let's chat!

    What kind of area or space is needed to host a pig roast cookout?

    We have found where there is a will, there is a way. We use a variety of set-ups and cooking techniques to pull off a great cookout in nearly any venue or cooking area. For an ‘On-site’ cookout, an open outdoor cooking area is required. Depending on the venue, our team can help determine if an ‘On-site’, ‘Catered’, or Hybrid style cookout would work best for properly catering your event.

    How far in advance should I reserve my date?

    Wedding receptions and other large events typically book 6-12 months in advance. Smaller cookouts book a bit closer to the event date. Weekends, holidays and other popular dates often book quickly… some more than 12 months out. If you want to plan a cookout, we should talk ASAP. The more time we have to plan the better! Reach out today to discuss possibilities and availability!

    What happens if it rains on the day of my event?

    Reel & Ranch cookouts are typically rain or shine events. This is real slow food catering and once we get started it is impossible to stop the process. Thankfully here in Southern California a whole day of rain is something we don’t often need to worry about. Our cooking and service areas are covered and do just fine in case of any passing sprinkles!

    Does every cookout include a free 'first taste' or 'last bite'?

    At all 'On-site' cookouts we prepare both a special first taste while the food is being prepared and also a sweet dessert bite to say, ‘Thank you,’ once the meal is through! For 'Catered' cookouts, hosts choose either a first taste -or- last bite. 'Drop-off' cookouts are yummy and convenient but are not particularly conducive to serving first taste or last bite courses so neither are included.
