    LOCAL SHELLFISH - BOILED, STEAMED & GRILLED

    All across the world boiling, steaming & grilling fresh shellfish brings people together. Depending on where you’re from, the flavors and what must be included in the pot might vary but the end result is always the same. Friends and families around the table for a flavorful feast where the emphasis is on being together, telling some good stories, and making memories over a great meal. This is what we do.

     

    All of our shellfish is hand selected for quality and flavor. It is responsibly sourced from local small fleet fishermen and trusted regional partners. We use your favorite seasoning and our biggest pot. Call all your friends and spread out some newspaper for a fun, roll-up-your-sleeves meal that will feed a crowd.

    SO-CAL'S BEST SHELLFISH

    The very best boils use what is fresh, in-season and locally available. In SoCal we have great shellfish available all year long. Spot prawn, Spiny lobster, Dungeness crab all make for great seafood boils.

    CHESAPEAKE CRAB FEAST

    In Maryland, crab is king and a boil means blue crab. We have access to great local blue crab. We steam and season with real J.O. Spice and serve the crabs with Old Bay & lemon-apple vinaigrette for dipping.

    SHRIMP ON THE BARBIE

    Any kind of shellfish on the barbie really! The local bounty of fresh seasonal, seafood means we can take about any fresh catch and throw it on the wood fire grill. We bring all the garlic & herb drawn butter.

    LOW COUNTRY BOIL

    New Orleans Cajun spice blend brimming with Crawfish, Shrimp & Crab. Corn-on-the-cob, smoked andouille sausage & tender red potatoes make the meal with crusty French bread, lemons and Tabasco.

    NEW ENGLAND CLAM BAKE

    We layer shellfish and seaweed, then cover the whole thing and let is steam with lemons and whole roasted garlic cloves. The result is some of the best lobster, shrimp, clams, and mussels you will ever eat.

    PAELLA DE MARISCOS

    One of the best-known dishes in Spanish cuisine, our Paella features crispy yellow saffron rice, spot prawns, clams and mussels. Paella is a perfect canvas for our local seafood and is a hit at every cookout.

    HOW WE HANDLE SERVING SIDES

    Depending on the type of shellfish you choose, we boil in mountain spring water or San Diego craft beer and use a secret blend of savory spices. We serve plenty fresh lemon and our signature shellfish dipping sauces.

     

    Every Reel & Ranch cookout includes 2 gourmet side dishes paired perfectly to compliment your fresh fish. In addition, we offer a wide variety of premium sides that can be added on to any meal.

    BROCCOLINI WITH ROASTED GARLIC

    Broccoli's leafier and more tender cousin wood-fire grilled with roasted garlic, sea salt and olive oil.

    PICKLED GARDEN VEGETABLES

    Our house veggies are pickled & packed with flavor in an awesome jalapeno, dill, garlic and vinegar brine.

    SWEET CORN HUSH PUPPIES

    Fried savory cornmeal with buttermilk, pepper jack cheese and whole sweet corn kernels.

    FANCY POTATO SALAD

    Pan-roasted fingerling potatoes with paprika, lemon, dill, creme fraiche and California caviar.

    TOMATOES, CUCUMBERS & ONIONS

    Our take on a traditional summer favorite with basil and red wine Italian vinaigrette.

    NOT SO TRADITIONAL MAC SALAD

    No Mayo here! Penne pasta with celery, carrot, cucumber and Dijon vinaigrette.

    After many cookouts, we have learned that each one is a little different. We all have different tastes, different visions and different needs. For most cookouts, we present meals in a serve yourself ‘better-than-buffet’ style.  Action stations are attended by chefs who can help serve, suggest & answer questions while guests select what they want from the offerings displayed.

    How much does a shellfish boil cookout really cost?

    Cookouts vary in price depending on season, how many people will be fed, what types of items or additional courses are selected, and a few other site and service-related factors. In order to ensure we are giving you the best & most accurate pricing possible we should talk specifics, let's chat!

    What kind of area or space is needed to host a shellfish boil cookout?

    We have found, where there is a will there is a way. We use a variety of set-ups and cooking techniques to pull off a great cookout in nearly any venue or cooking area. For an ‘On-site’ cookout an open outdoor cooking area is required. Depending on the venue our team can help determine if an ‘On-site’, ‘Catered’, or Hybrid style cookout would work best for properly catering you event.

    How far in advance should I reserve my date?

    Wedding receptions and other large events typically book 6-12 months in advance. Smaller cookouts book a bit closer to the event date. Weekends, holidays and other popular dates often book quickly… some more than 12 months out. If you want to plan a cookout, we should talk ASAP. The more time we have to plan the better!     What happens if it rains on the day of my event?

    Reel & Ranch cookouts are typically rain or shine events. This is real slow food catering and once we get started it is impossible to stop the process. Thankfully here in Southern California a whole day of rain is something we don’t often need to worry about. Our cooking and service areas are covered and do just fine in case of any passing sprinkles!

    Does every cookout include a free 'first taste' or 'last bite'?

    At all 'On-site' cookouts we prepare both a special first taste while the food is being prepared and also a sweet dessert bite to say, ‘Thank you,’ once the meal is through! For 'Catered' cookouts, hosts choose either a first taste -or- last bite. 'Drop-off' cookouts are yummy and convenient but are not particularly conducive to serving first taste or last bite courses so neither are included.
